4th of July S’mores Brownie Bars


Do you ever have an idea for a recipe that starts out innocently enough, like toasted marshmallow brownies, but quickly ends up completely out of control? Say hello to S’mores Brownie Bars, it will be your new all time favorite s’mores recipe. (Find more brownie recipes here and here and S’mores Popcorn here!)

Toasted marshmallow led to wondering what I was thinking of not including graham crackers because that would be S’mores Brownies! Or, as Andrew is insisting on calling them, S’mornies. After I had started making the graham cracker layer, I thought to myself, “I should add a layer of chocolate chips!” Then I told myself that dark chocolate brownies, graham crackers, marshmallow, AND chocolate chips are totally crazy. Thankfully, I convinced myself that OF COURSE, it was crazy, and that is why I should do it. I apologize for almost giving you this recipe without any chocolate chips.

THEN, out of the corner of my eye, I spotted a jar of red, white, and blue star sprinkles that I had purchased during a late night “OMG WHAT AM I DOING WITH MY LIFE” Amazon shopping adventure to comfort myself. Sunday is the 4th of July, I’m making smores brownies, and I have a jar of red, white, and blue sprinkles?! Coincidence? Actually, no. I mean, why else would I have a jar of red, white, and blue sprinkles laying around if not to use them for the 4th of July? Duh.

It's your new s'mores recipe.These brownies come together super quick too because I used a boxed brownie mix for the lazy factor. Have a favorite homemade brownie recipe you love? Go for it, you overachiever! All you do is pour some brownie batter into your pan, cover with graham crackers that you have sort of squished to fit, smoosh chocolate chips on top of that, and cover with the rest of the brownie mix! Eventually, you add some marshmallows, but not until the end unless you want people to think you that you cooked these brownie bars in an actual campfire. And that you are really awful at cooking in a campfire, or you have a really awful s’mores recipe. PRO TIP: When cutting the s’mores brownie bars, coat your knife in non-stick cooking spray as often as possibly needed. How often is that? Trust me; you will know.

SMORES BROWNIE BAR INGREDIENTS

  • One box dark chocolate brownie mix
  • Whatever other ingredients the box tells you, usually eggs and oil
  • Graham crackers (I used about four in an 8×8 pan)
  • Chocolate chips, amount dependent on your stress level that day, I mean pan size
  • Same for the marshmallows
  • Sprinkles

DIRECTIONS FOR S’MORES BROWNIE BARS

  1. Preheat oven to whatever temperature your brownie box says.
  2. Pick your pan size.
  3. Spray with non-stick spray.
  4. Mix brownie batter according to the directions on the box.
  5. Pour half the batter into the pan.
  6. Cover with a layer of graham crackers, crushing them to fit when needed.
  7. Cover with chocolate chips.
  8. Cover with remaining batter.
  9. Bake for however long your brownie mix and pan combo is supposed to bake.
  10. Five minutes before your brownies finish, take them out and cover the top with marshmallows and put back into the oven for the remaining five minutes.
  11. Remove from oven and sprinkle with sprinkles.
