RECIPE: Peanut Butter Banana Brownies


I’ve developed a new super power. I can get in and out of Costco in 30 minutes or less. I’m like the pizza delivery of Costco runs, except it never ends in pizza, and if I take more than 30 minutes, my freebie is being stuck in a never ending Costco checkout line.

I’d still take the Costco checkout line over fast food delivery pizza any day.

On this last trip, I stumbled across a box of brownie mix equal to six boxes of brownie mix. What does that mean for you, my lovely readers? NONSTOP BROWNIE RECIPES. Well, six of them. (You can find part two here and some more brownies here!)

This brownie recipe is recipe #1. Peanut butter banana brownies are like, the most chocolatey banana bread ever that’s been covered in peanut butter. It’s also a good chance to use that all natural type peanut butter, the kind you have to stir because the oil separates, but then you just end up making a mess because there isn’t enough room in the actual jar to stir the peanut butter? My mom used to get that kind, and it came in something the size of a paint bucket. It sat on a shelf in the pantry right next to the dried bulgur and Lucky Charms. Everything in moderation?

Brownies that are like eating the most amazing banana bread ever. Or banana bread that is like eating the most amazing brownies ever. Either way, banana replaces the egg which means you can have no fear when eating the batter!

At first, I was going to replace the oil in the recipe with banana, but then I had the most brilliant idea of anyone who has just been on a Costco trip, got everything from the garage to a second floor apartment by piling it all in front of the elevator, blocking the door to get everything IN the elevator, doing the same to get OUT of the elevator, left a trail of Costco items down the hallway, and then stood in front of a box of brownie mix. In other words, it wasn’t that brilliant, but it FELT like it at the time.

I was going to replace the eggs with banana so that I could eat the brownie batter.

I know, I know. A lot of you would do this regardless, but something about chemo and doctors wanting you to be “safe” and NOT eat raw eggs. Even though I don’t always listen to them, since I still got my nose pierced, had acrylic nails for a while, and eat sushi on occasion, I arbitrarily drew the line at raw eggs. BANANAS, however, are TOTALLY safe to eat. They also mean that you can undercook the brownies.

Pro tip: If you want to make this peanut butter banana brownie recipe be pretty for photos a such, wait until the brownies COMPLETELY cool before cutting, unlike I did. I didn’t even bother TRYING to make it look like things weren’t falling apart because this is REAL LIFE people. INGREDIENTS FOR PEANUT BUTTER BANANA BROWNIES

  • Boxed brownie mix
  • 2 medium sized, ripe bananas
  • Runny, salted (but not sweetened) natural peanut butter
  • Whatever else ingredients the brownie box tells you, except the eggs

DIRECTIONS FOR PEANUT BUTTER BANANA BROWNIES

  1. Heat oven according to package directions.
  2. Mash up bananas in a large bowl with a fork. They don’t need to be completely smooth, but you also don’t want large pieces of banana left.
  3. Add all the other ingredients from the box (not the peanut butter).
  4. Pour batter into pan (I used an 8×8 pan), leaving enough left in the bowl for you to eat.
  5. Drizzle peanut butter on top of batter. Make it however peanut buttery you’d like.
  6. Drag a knife through the batter to make the peanut butter all swirly so people will think you are all fancy and stuff.
  7. Cook according to package directions.
  8. Eat peanut butter banana brownies for all meals until brownies are gone. So, one meal.
