Recipe: Fruity Pebbles Confetti Cake


This cake was the first time in my life I’ve tried fruity pebbles, and all I could think was, HOW IS THIS BREAKFAST APPROPRIATE?! That is a confusing thought to have considering I have no problem eating lucky charms or cap’n crunch, but something about these weird flakes of fruity nothingness has lodged in my brain as not breakfast. The little flakes of fruity nothingness did, however, remind me of confetti, which led me directly to confetti cake. Although, to be honest, A LOT of things lead me to think about cake. Peonies on the coffee table? Cake. Cobs of corn in the fridge? Cake. Piles of laundry on the floor? Ca…er, okay that just reminds me that maybe I should fold laundry, but after folding laundry I should reward myself with cake, so CAKE! Seriously, though. Look at that cake. It’s so party ready it brings its own confetti. How many party guests can you say that about?

Now, this Fruity Pebbles Confetti Cake comes with the super scientific directions of making the cake, layer frosting and cereal, cover in frosting and cereal, but that is kind of what makes this cake amazing. You can literally make it in any way, shape, or flavor you’d like! I chose to use four mini layers of strawberry cake and fluffy white frosting. But why not a funfetti cake for DOUBLE CONFETTI CAKE. Or chocolate, or this weird neon swirl cake mix I saw at the grocery store. Okay, maybe don’t use that last one because that cake mix kind of freaked me out. Use colored frosting! Or flavored frosting! OR COLORED AND FLAVORED FROSTING. I have no idea why I’m all capsing that like it’s a new idea, but it’s 5:30 am so we are just going to go with it.

My one piece of advice? If you aren’t super confident in your cake decorating skills, don’t attempt to make this cake in four mini layers. I’m most likely overconfident in my cake decorating skills, and four mini layers were almost a disaster. There isn’t enough stickiness in the frosting + fruity pebbles combo to securely hold small cake layers at that height, so I would absolutely recommend making this cake either mini, or four layers, but not both. The best part about this cake if you aren’t super confident in your cake decorating skills? If you are awful at frosting a cake, it doesn’t matter because you are just going to cover it with edible confetti! That is what I’m bringing to the table here, friends. Recipes that may have almost been a failure, but it probably doesn’t matter because no one will ever be able to tell and it will still taste like cake. Hmmm… I think I need to make that into a lovely quote image and post it on instagram. “It doesn’t matter if you fail, the cake will still taste like cake.” Y’all are probably ready for the instructions, aren’t you?

FRUITY PEBBLES CONFETTI CAKE INGREDIENTS

  • Boxed cake mix or your favorite cake recipe baked to the layer size and number of your cake dreams
  • An appropriate amount of frosting plus approximately one cup extra to make up for how much frosting you will eat while making this cake
  • One box fruity pebbles

FRUITY PEBBLES CONFETTI CAKE SUPER SCIENTIFIC INSTRUCTIONS

  1. Bake cake.
  2. Let cool.
  3. Layer cake, frosting, fruity pebbles. Repeat.
  4. Coat entire cake with frosting.
  5. Take small handfuls of cereal and lightly press them against the side of the cake so they stick in the frosting.
  6. Sprinkle cereal on top.
  7. Realize how big of a mess fruity pebbles make.
  8. Stop caring about the mess and continue eating frosting.
  9. YOU HAVE FRUITY PEBBLES CONFETTI CAKE!
